Serves four
250 g quark (fromage frais)
4 eggs
1 dl sugar
5 tbsp wheat flour
salt
2 tsp vanilla sugar
butter for frying
To garnish
jam made of raspberries and arctic brambles
2 dl double cream, whipped
2 tsp genuine vanilla sugar
Combine all the ingredients into a smooth batter. Melt butter in a pancake pan and pour in about ½ dl batter per pancake. Use moderate temperature and fry the creamy pancakes on both sides until golden brown.
Place three pancakes on a plate and add jam and whipped cream flavoured with vanilla sugar. Decorate with icing sugar.
