Asparagus with passion fruit vinaigrette
600 g green asparagus
Boiling water: 1 lemon
1 tsp honey, 1 tsp salt
Sauce
passion fruit vinaigrette
extra virgin olive oil
salt flakes
Peel the asparaguses cautiously and cut off about 2 cm from base.
Add water, lemon slices, spices and asparaguses into pan. Take care
that water does not cover the asparagus buds. Cook asparagus for 5–1
5 minutes depending on their size and freshness. Portion out the
asparagus on plates. Mix the fruit vinaigrette, oil and salt and
pour the sauce over the asparaguses. Garnish with chopped parsley.
