Blue cheese pie

Serves four

300 g blue cheese
3 ripe, firm pears
3 eggs
1,5 dl double cream
1,5 dl milk
black pepper

Dough
125 g butter
3 dl coarse wheat flour
3 tbsp cold water

Prepare the dough in a food processor. Pour in first the flour and then the butter in small dollops. Blend until the mixture resembles a grainy mass. Pour in cold water and let the machine run the dough becomes a ball.

Put the dough in refrigerator for a couple of hours. With a rolling pin, form the dough into a round piece and transfer it to a round Ø24 cm round pie pan. Line the sides of the pan with baking paper. Pierce the base with a fork and pre-cook in oven at 180 degrees Celcius until light brown. Cut the pears into segments and put them in the pan. Sprinkle blue cheese over.

Beat up eggs, cream, milk and black pepper and pour the mixture in the pan. Cook in oven until the batter has thickened. Serve with fresh green lettuce.
