For four
5 dl chicken stock
4 dl couscous
2 tbsp yellow raisins
6 chopped dried apricots
2 tbsp chopped fresh mint
2 tbsp virgin olive oil
lemon segments
Bring 5 dl of chicken stock to the boil. Add 4 dl couscous. Cover and let the couscous cook as instructed on the package. Mix the couscous until it is loose, and add the rest of the ingredients. Decorate with lemon segments and serve hot or cold. Tomato salad is a perfect side dish.
