Blinis

2 dl lukewarm water
2 tsp yeast
1 dl wheat flour
1 dl buckwheat flour
1 tsp salt
2 egg yolks
2 egg whites
1 tbsp melted butter
2 dl hot milk
butter for the pan

Mix yeast and flour into the lukewarm water. Let the batter rise for 2-3 hours. Add salt, egg yolks, melted butter, hot milk and lastly the egg whites beaten into hard foam.

If you do not have blini pans, use ordinary pancake pans. Fry fairly thick and crusty blinis. Serve immediately with roe, crushed onions and smetana.

Herring salad, smoked fish paste or shrimp mayonnaise are good alternatives for roe.

The batter is enough for about 6 large blinis.
